Instant Pot Lemon Blueberry French Toast Casserole

Since we moved away from “home”, we find ourselves with overnight guests on a pretty regular basis. I really enjoy the company, but I don’t love trying to make food and keep the house in some sort of order with everyone around.  There’s just not enough room for everyone and everything! In those cases, I rely on the convenience and simplicity that I get from the Instant Pot. This Lemon Blueberry French Toast Casserole Instant Pot Recipe is a family favorite – and one of the ways I make delicious breakfast for a house full of people in just a few minutes.

Instant Pot Lemon Blueberry French Toast Casserole     

This Instant Pot french toast casserole recipe is also a great way to use up those extra dinner rolls from Thanksgiving! First, spray an oven safe dish with cooking spray. Then, cube the dinner rolls and place them in the dish.

In a separate bowl, whisk together eggs, milk, zest, and lemon juice, and then fold in the  fresh blueberries. I suppose you could use thawed frozen blueberries for this too, but you don’t want the kind in juice.

Set the pressure valve on your Instant Pot to sealing and cook for 25 mins on the Porridge setting.

Release the pressure valve and remove the lid. Let it rest for a few minutes while you gather utensils, syrup, powdered sugar, etc.

That’s it! Serve it up and garnish! Yum!

Instant Pot Lemon Blueberry French Toast Casserole

Ingredients:

6 Hawaiian Dinner Rolls
3 Eggs
½ cup Whole Milk
1 Teaspoon of Vanilla Extract
½ cup Fresh Blueberries
Zest and Juice of 1 Lemon
Powdered sugar
Syrup

Instructions

Spray 1-1/2 quart oven safe dish with cooking spray
Cube dinner rolls and place in dish
Whisk together eggs, milk, zest, and lemon juice
Fold in fresh blueberries
Set pressure valve to sealing
Cook for 25 mins on porridge setting
Release pressure valve and remove lid
Let rest for a few minutes
Garnish with powdered sugar and/or syrup
