Instant Pot Lemon Butter Chicken is amazingly light, lemony, buttery, and comes together in the Instant Pot in about a half hour. It makes a perfect weeknight meal for your family!

  1. Begin by trimming the chicken and cutting breasts straight across.
  2. Liberally season the breasts with seasoning salt and pepper.
  3. Meanwhile, drop a stick of butter in the Instant Pot and press Saute.
  4. When butter is melted, add chicken breasts, browning on both sides. (2-3 minutes each side)
  5. Add all remaining ingredients except lemon slices.
  6. Add lid to Instant Pot. Using the Manual Setting, set for 20 minutes high pressure.
  7. Natural Pressure Release 5 minutes
  8. Serve over pasta, rice, or potatoes. Garnish with lemon slices and additional parsley if desired
Recipe Notes

Note: If you like your sauce a little on the thicker side, add a little bit of a cornstarch slurry to it before serving. Set to Saute and stir until sauce thickens to desired taste.
